Aunt Mae's Rum Cake

Aunt Mae's Rum Cake has been a family favorite for as long as I can remember and can usually be found at any Harrington family gathering (most recently seen at Christmas!)

Aunt Mae's Rum Cake
1 box yellow cake mix
1 box Instant vanilla pudding
1/2 c. rum
1/2 c. water
1/2 c. oil (veg. or canola)
4 eggs
1/2 c. pecans
Preheat oven @ 325 degrees.
Grease and flour a bundt cake pan (very important step!) and sprinkle the pecans in the bottom. Combine all other ingredients and pour into pan and bake for 50-60 min. Test w/ a toothpic.
1/2 c. confectioners sugar
1/4 c. rum
1/8 c. water
1/2 stick butter
heat butter in a sm saucepan and whisk in the rest. Heat for @ a min., then pour over rum cake in the pan while it's hot from the oven. Let cool completely and turn out onto a plate.

Merry Christmas 2012

Grace had a very Merry 1st Christmas! We had a marathon celebration this year, beginning Friday night when Matt's Aunt came to town and the bubbles started flowing.
Then on Saturday, Grace and I packed up the car, picked up Auntie Jessica in Boston and headed north to Portsmouth, NH to spend a night with my long lost, but dear friends Val and Jen. Portsmouth seems like a random destination for a girl's trip, but it's actually quite cute and the mid-point between Rhode Island and Boothbay, ME where Val lives. If you're looking for a good restaurant recommendation for Portsmouth, try Popovers on the Square. It was pretty busy so we did have to wait for a table, but we had a great time. If pizza is more your thing, I was thrilled to remember that one of my favorite New England pizza establishments was in Portsmouth, Flatbread Company!! Now I could wax poetic about those Flatbread Co. Hippies and their pizza, but the short story is this: I adore Flatbread and go every time I find myself in North Conway, NH (which is pretty often due to my Attitash connection). There's also a Flatbread in Somerville, MA right down the street from where my sister used to live. The pizzas are made with organic ingredients and always ask for the specials! My favorite, although it is a special and not always available, is the Buffalo Chicken, followed by the Homemade Sausage and Coevolution (menu fixtures). Ok, that was my attempt at restraint. Anyway, we had a wonderful time and I'll leave it at that!

Christmas Eve was a whirlwind tour of both West and East Bay, that took us from my Mom's house in Saunderstown, to my Aunt's house in South Kingstown, then over to Grace's godfather's parent's house in Portsmouth, with a grand finale ending (and collapsing into bed) at Matt's parent's house (again in Portsmouth). If I plotted our Christmas Grand Weekend out on a map you would see that we started in Portsmouth, traveled to Portsmouth, NH, and eventually landed back in Portsmouth (RI).

Remember AIM?

AIM was the best... And the best part? Finding old conversations. This was with a co-worker/bff circa 2005 and apparently we chose to converse via AIM rather than the corporate installation Sametime. I'm sure we had our reasons.

A Gender Reveal Celebration

Last night we joined our friends for their Gender Reveal Party. Guests were invited to show their guess by hanging an ornament on the Team Boy or Team Girl Christmas trees and pick a mustache or lips on a stick.

When the time came to cut the cake.... Team Girl wins! I think the coolest part was that our parents to be didn't know until they cut into the cake. Oh and of course it was also cool that my guess was correct!

Celebrating the holidays Work Style

On Friday my department headed up to Boston to see the Mario Testino exhibit at Museum of Fine Arts for our holiday celebration.

If you're not familiar with Mario Testino, he is a photographer of both international superstars and our favorite Royal Family (my favorite at least)!

Post MFA the team had lunch at 5 Napkin Burger. Milkshakes were amazing... almost as great as our holiday gifts! Fall samples!

Full Speed Ahead

The work weeks is almost over and aren't they always more brutal after you've been on vacation? We arrived home late on Sunday night and I still don't think I've had time to fully recover. Our suitcase hasn't even made it upstairs yet, and I can't even begin to think about unpacking it.

On top of it all, December is always a crazy month and even though I still have plenty of time to prepare and enjoy the holidays, I'm starting to feel the pressure!

Hopefully this weekend will allow me to regroup, do some shopping, and set my sights on the Christmas-y things that I wanted to accomplish!
